American style low and slow bbq.
My proposed business is a food
catering / market stall cooking American style low and slow bbq. I use a
wood fired bbq that infuses the food with smoke and also combines with the
spices already on the meat from the dry rub before it goes into the smoker.
Although I'm not cooking authentic American flavours but infusing the meat
with different flavour profiles with dry rubs, brines and wood selection.
Cooking times generally range from three to twelve hours at low
temperatures.
Meats are beef and pork ribs, beef brisket, pork, chicken and sausages.
The target audience age groups would be from 18 to 60 years old, both male
and female.
As for designs I'm pretty open there. No real concepts are in my mind.
Possibly incorporate the sense of fire and smoke into it. It would have to
be something that can easily be embroidered on to shirts, hats aprons etc
and looks good at a larger size as well on a banner, stickers etc. One or
two colours on a coloured background maybe. There is a design that Myron
Mixon smokers use that look pretty cool.
Bbqs are painted black. Our serving and cooking uniforms are full buttoned
shirts and long trousers or shorts for summer with apron and hat.
