Resumen de Diseño de Logo

We are looking for a redesign of a portion of our existing logo. We would like to replace the "Texas with A Cowboy Hat" that currently exists in the circle located at the top of our logo (see attached file for reference). We would like this portion of our logo to still reflect our Texas/Steakhouse theme, and to be simple enough to read well when translated into neon (see the attached example of our current road sign). We would like this portion to match the current color palette (red, black, yellow, orange, etc), and to be able to stand on its own as a symbol for the restaurant when removed from the words.
