Bubble tea drink shop needing a bright & simple logo design

We are looking for a logo design for a start-up bubble tea business in Maui, Hawaii.
The logo will be used to set the tone for the business identity, shop store front, printing on the cups, merchandise and ad signs.
The design needs to be clean, simple, reflect the laid back atmosphere of a tropical island and the cool nature of the name.
Some initial ideas incorporates sun, palm trees, "hang loose" hand sign, surfboard and a shark (we'd like to favour this as our mascot).
Colour choices ideally in the florescent orange, green, etc. limited to 4-5 colours.
